-
3 tbsp butter
-
¼ cup heavy cream
-
½ cup shredded cheddar cheese
-
¼ cup grated parmesan cheese
-
½ tsp garlic powder
-
Salt and pepper to taste
Instructions
Step 1: Prepare the Cauliflower
-
Bring a large pot of salted water to a boil.
-
Add the cauliflower florets and cook for 10–12 minutes, until very tender.
-
Drain well and let the cauliflower sit for a few minutes to remove excess moisture.
Step 2: Make the Cauliflower Mash
-
Place the cooked cauliflower in a food processor or blender.
-
Add butter, heavy cream, garlic powder, salt, and pepper.
-
Blend until smooth and creamy.
-
Stir in the cheddar and parmesan cheese.
-
Set aside while preparing the filling.
Step 3: Cook the Meat Filling
-
Heat olive oil or butter in a large skillet over medium heat.
-
Add the diced onion and cook for 3–4 minutes until soft.
-
Stir in garlic, celery, mushrooms, and carrots, cooking another 3–4 minutes.
-
Add the ground beef or lamb and cook until browned, breaking it apart with a spatula.
Step 4: Add Flavor
-
Stir in tomato paste, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper.
-
Pour in the beef broth and simmer for 5 minutes.
-
If you prefer a thicker gravy, sprinkle xanthan gum and stir well.
Step 5: Assemble the Shepherd’s Pie
-
Preheat oven to 375°F (190°C).
-
Spread the meat mixture evenly in a baking dish.
-
Spoon the cauliflower mash over the top.
-
Smooth with a spatula and create light ridges with a fork for texture.
Step 6: Bake
-
Place the dish in the oven and bake for 20–25 minutes.
-
For a golden crust, broil for 2–3 minutes at the end.
Tips for the Best Keto Shepherd’s Pie
Drain cauliflower well
Too much moisture can make the topping watery.
Use lamb for authenticity
Traditional shepherd’s pie is made with lamb, while beef makes it technically a cottage pie.
Add cheese for extra flavor
Cheddar or parmesan creates a richer topping and helps it brown beautifully.
Great for meal prep
This dish reheats perfectly and tastes even better the next day.
Variations
Dairy-Free Version
Use coconut cream instead of heavy cream and skip the cheese.
Extra Veggie Keto Pie
Add zucchini, spinach, or green beans for more nutrients.
Spicy Version
Add red pepper flakes or diced jalapeños to the meat filling.
