Dairy-Free Keto Waffles Recipe

Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 4 waffles

Ingredients

  • 1 ½ cups almond flour

  • 2 tbsp coconut flour

  • 2 tbsp ground flaxseed (optional, adds texture)

  • 2 tsp baking powder (gluten-free)

  • ½ tsp salt

  • 3 large eggs

  • ½ cup unsweetened almond milk (or other dairy-free milk)

  • 2 tbsp coconut oil, melted (plus more for greasing)

  • 1 tsp vanilla extract

  • 2–3 tbsp low-carb sweetener (like erythritol or monk fruit)

Optional toppings: fresh berries, sugar-free syrup, coconut yogurt, nut butter

Instructions

1. Preheat the Waffle Iron

  • Preheat your waffle iron according to manufacturer instructions.

  • Lightly grease it with coconut oil or non-stick spray.

2. Mix the Dry Ingredients

  • In a large bowl, combine:

    • Almond flour

    • Coconut flour

    • Ground flaxseed

    • Baking powder

    • Salt

    • Sweetener

  • Whisk until evenly combined. This ensures no clumps and gives uniform texture.

3. Mix the Wet Ingredients

  • In a separate bowl, whisk together:

    • Eggs

    • Almond milk

    • Melted coconut oil

    • Vanilla extract

  • Make sure the coconut oil is not too hot to avoid cooking the eggs.

4. Combine Wet & Dry Ingredients

  • Slowly pour the wet mixture into the dry ingredients.

  • Stir until fully combined. The batter should be thick but pourable.

  • If too thick, add 1–2 tbsp of almond milk at a time until you reach desired consistency.

5. Cook the Waffles

  • Pour batter into the preheated waffle iron (about ½ cup per waffle).

  • Cook for 3–5 minutes, or until waffles are golden brown and crisp.

  • Carefully remove and place on a wire rack to maintain crispiness.

6. Serve & Enjoy

  • Top with your choice of:

    • Fresh berries

    • Sugar-free syrup

    • Coconut yogurt

    • Almond or peanut butter

  • Serve immediately for best texture.

Tips for Perfect Keto Waffles

  1. Almond vs Coconut Flour: Almond flour gives fluffiness; coconut flour thickens. Adjust ratio slightly if needed.

  2. Crispier Waffles: Let waffles rest on a wire rack after cooking. Avoid stacking them while hot.

  3. Storage: Store leftovers in an airtight container for up to 3 days. Reheat in a toaster for crispiness.

  4. Flavor Boost: Add cinnamon, nutmeg, or lemon zest to the batter for extra flavor.

These dairy-free keto waffles are low-carb, grain-free, and satisfy your breakfast cravings without any guilt. 🥥🥚✨
