Lazy Keto Waffle Recipe (No Fuss!) 🧇🥓

Prep Time: 5 minutes
Cook Time: 5–7 minutes
Servings: 2–3 waffles

Ingredients

  • 1 cup almond flour (or coconut flour for variation, see note)

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 2 large eggs

  • 1/3 cup unsweetened almond milk (or heavy cream for richer waffles)

  • 2 tbsp melted butter or coconut oil

  • 1 tsp vanilla extract

  • Optional: 1–2 tbsp low-carb sweetener (erythritol, monk fruit, or stevia)

  • Optional toppings: butter, sugar-free syrup, berries, whipped cream

Instructions

1️⃣ Preheat Your Waffle Iron

  • Turn on your waffle iron to medium heat.

  • Lightly grease with butter or non-stick spray to prevent sticking.

2️⃣ Mix the Dry Ingredients

  • In a medium bowl, whisk together almond flour, baking powder, and salt.

  • Optional: stir in your sweetener if using.

3️⃣ Mix the Wet Ingredients

  • In a separate bowl, beat eggs lightly.

  • Add almond milk, melted butter, and vanilla extract. Mix until smooth.

4️⃣ Combine Wet & Dry

  • Pour wet ingredients into dry ingredients.

  • Stir gently until combined. Batter will be slightly thick but pourable.

  • Tip: Don’t overmix—almond flour can make waffles dense if overworked.

5️⃣ Cook the Waffles

  • Pour batter onto the preheated waffle iron (approx. 1/3–1/2 cup per waffle, depending on size).

  • Close the lid and cook for 5–7 minutes, or until golden brown and firm to the touch.

  • Carefully remove with a spatula.

6️⃣ Serve & Enjoy!

  • Top with butter, sugar-free syrup, keto-friendly chocolate chips, or berries.

  • Serve immediately for the crispiest texture.

Notes & Tips

  • Crispier Waffles: Use coconut flour instead of almond flour, but reduce liquid slightly (start with 1/4 cup almond milk).

  • Make-Ahead: Waffles can be frozen individually. Reheat in a toaster for 1–2 minutes.

  • Dairy-Free: Swap butter for coconut oil and almond milk for unsweetened coconut milk.

  • Extra Fluffy: Separate eggs, beat the whites until stiff, and fold in at the end.
