Ingredients

  • 1 cup unsweetened coconut milk (canned or carton)

  • ½ cup heavy cream

  • ½ cup ice cubes

  • 2 tbsp fresh lemon juice (about 1 lemon)

  • 1 tsp lemon zest

  • 2 tbsp unsweetened shredded coconut

  • 2–3 tbsp erythritol or preferred keto sweetener (adjust to taste)

  • ½ tsp vanilla extract

  • Optional: 1–2 drops liquid stevia for extra sweetness

  • Optional garnish: toasted coconut flakes, lemon slice, or mint leaves


Instructions

  1. Prepare your ingredients:

    • Juice one fresh lemon and zest it for maximum flavor.

    • Measure out the coconut milk, heavy cream, sweetener, and shredded coconut.

  2. Blend the shake:

    • In a high-speed blender, combine the coconut milk, heavy cream, ice cubes, lemon juice, lemon zest, shredded coconut, sweetener, and vanilla extract.

    • Blend on high for 30–45 seconds, or until smooth and frothy.

  3. Taste and adjust:

    • Check sweetness and tanginess. Add more sweetener or lemon juice if desired.

    • If you like it thicker, add a few more ice cubes or a tablespoon of coconut cream.

  4. Serve:

    • Pour into chilled glasses.

    • Garnish with toasted coconut flakes, a lemon slice, or fresh mint for a tropical touch.

  5. Enjoy immediately:

    • This shake is best served cold for maximum refreshment.
